Caprese Salad

A wonderful, light salad, a perfect compliment to your favorite red wine and your choice of pasta salad or fish.

Ingredients:

  • 4 large tomatoes, juicy
  • 4 tablespoons of extra virgin olive oil
  • 1 1/2 cups of balsamic vinegar
  • 1 package of fresh mozzarella cheese packed in water
  • 16 sliced basil leavessalt and pepper to liking

Procedure:

  1. Slice the tomatoes at one quarter inch and place on the plate.
  2. Slice thin portions of mozzarella cheese and place on each seperate tomato.
  3. Place a spring of basil on the individual tomato slices.
  4. Combine the balsamic vinegar and olive oil. Pour it over the tomatoes.
  5. Add pepper and salt to liking.
  6. Serve

Serving Size:

This simple tasty recipe will serve up to 4 people.
