A wonderful, light salad, a perfect compliment to your favorite red wine and your choice of pasta salad or
fish.
Ingredients:
- 4 large tomatoes, juicy
- 4 tablespoons of extra virgin olive oil
- 1 1/2 cups of balsamic vinegar
- 1 package of fresh mozzarella cheese packed in water
- 16 sliced basil leavessalt and pepper to liking
Procedure:
- Slice the tomatoes at one quarter inch and place on the plate.
- Slice thin portions of mozzarella cheese and place on each seperate tomato.
- Place a spring of basil on the individual tomato slices.
- Combine the balsamic vinegar and olive oil. Pour it over the tomatoes.
- Add pepper and salt to liking.
- Serve
